2 cups raw yellow squash, or zucchini, grated
1 tablespoon onion, grated
2 egg whites
Beat egg whites until light and fluffy; mix with grated squash and onion. Drop large tablespoonfuls of squash mixture into heated non-stick pan. Cook on each side until brown.
